Colors of the Galapagos: Nutrition That Glows from the Inside Out
I. Worn on the Outside, Built from the Inside
A blue-footed booby's feet carry a turquoise-to-cerulean hue so vivid it looks as if it came from a painter's palette rather than nature. What surprised and fascinated me was that this color is not simply a genetic decoration. It is, in part, a reflection of the bird's internal health. The color is influenced by carotenoids obtained through the bird's diet and by the structure of the tissues in its feet. The brighter and more saturated the color, the healthier the bird tends to be. It can signal nutritional status, vitality, and reproductive fitness. When a bird becomes ill or nutritionally stressed, that electric shade can fade. In the natural world, appearance is often a window into biology — an apparent expression of what is happening beneath the surface. Health is not hidden here. It's worn on the outside, built from the inside.
The blue-footed booby was not the only example.
The Sally Lightfoot crab revealed the same principle through a different pigment. Its vivid red coloration comes in part from astaxanthin, a carotenoid obtained through its diet. Astaxanthin has also been studied in humans for its potential effects on metabolic markers, including glucose regulation and lipid metabolism — a fascinating example of how compounds found in nature continue to be explored for their biological effects.
I encountered many remarkable animals, but one of the most memorable was my encounter with a Galapagos tortoise. According to a guide estimating its age from shell markings and size, it was around 120 years old — with a natural lifespan that can reach 190 years, maybe even plus! My interest in healthy aging made me want to understand how that kind of longevity is even possible and if some of those principles could be translated into extending the lifespan of humans.
It came down to something more complicated than a single "longevity gene." It was the result of multiple biological systems working together, both inside and outside the animal, in remarkable alignment with its environment.
External: the shell. The tortoise's shell is made primarily of keratin, the structural protein that also forms our skin, hair, and nails. In reptiles, harder forms of keratin create an extraordinary protective barrier between the animal and its environment.
Looking at that shell, I found myself thinking about our own skin. How do we protect and maintain the structure that separates our internal world from the external one? How do we support the collagen, keratin, and connective tissue that allow our skin to remain resilient as we age? How could I optimize my own "shell"?
Internal: the biology. The tortoise's longevity is also tied to a remarkable collection of biological adaptations — including DNA repair, immune function, cellular maintenance, metabolism, and mechanisms that help protect against the accumulation of damage over time. These processes map onto what researchers now describe as the hallmarks of aging: a network of interconnected mechanisms that influence how organisms maintain themselves, repair damage, and ultimately age. And then there is its metabolic pace. Tortoises live at an extraordinarily slow pace, with a low resting heart rate and relatively low energy expenditure. Their biology is built for efficiency and conservation rather than speed — resilience comes from systems that are able to maintain themselves over time.
Across the Galapagos, the pattern seemed to repeat everywhere I looked. The animals' colors, vitality, and condition reflected ecosystems rich in food, biodiversity, and natural abundance. These were some of the most vibrant, untouched expressions of color I had ever seen — colors shaped by evolution and environment, not by human intervention or optimization. Their colors told their stories. I wasn't simply looking at beautiful animals. I was looking at a readout of their biology — of what they consumed, how they lived, and the environment that sustained them.
II. We Can't Bank on Later
I traveled to the Galapagos last year, inspired a full year earlier by a newspaper ad for a voyage to Antarctica — a cartoonish, multi-deck ship surrounded by penguins and lounging seals, captioned: "a voyage of a lifetime." I taped it to my wall of dreams, assuming it would be something I did much later in life. But eventually, I came to a realization: we can't bank on later.
On the trip, I found myself surrounded by people in their 50s and beyond who had decided to stop waiting. There was a British couple who had sold their dental practice to private equity and, rather than settling into retirement, had mapped out the rest of the year to travel around the world. An Australian woman had worked multiple jobs across different industries as a single mother to support her two sons, built a successful life for herself, and just completed a trek through South America before arriving in the Galapagos. There was a three-generation family who had built an entire industry around tourism in their home country and were now traveling together. And then there was a couple in a second-stage marriage, one of them constantly battling seasickness but willing to brave the ocean anyway, armed with Dramamine and an unwavering commitment to their new partnership.
Different lives. Different circumstances. Different definitions of adventure. On paper, none of these paths should have led anywhere near one another. And yet here we all were, in the same place, at the same time, each of us having arrived — independently, by entirely different routes — at the same quiet decision. Across the board, the only regret this group of otherwise regret-free people shared was the same: they wished they had done it sooner.
That stayed with me.
Talking with guides whose livelihoods are intertwined with this ecosystem, I also developed a profound respect for the delicate systems that sustain it. Climate change had always felt like an abstract concept, something distant and theoretical, until I saw how interconnected everything truly was. Changes in rainfall, ocean currents, or temperature could reshape entire populations. The lives of plants and animals were connected in ways that were difficult to appreciate from a distance. One of the first things I noticed while walking among the birds was something unexpected. Not a single animal moved out of our way. None showed fear. We were the visitors. This was their home. And somehow, that small realization became part of the larger lesson.
III. Biology Responds to What It Receives
Nothing there felt disconnected. The animals were not simply beautiful on their own. They were expressions of the ecosystem that sustained them. Their food depended on the ocean. The ocean depended on temperature and currents. Plants depended on rainfall and soil. Populations depended on one another. The health of each species was intertwined with the health of everything around it.
At first, the blue-footed booby, the Sally lightfoot crab, and the tortoise seemed like three very different stories. But the longer I thought about them, the more connected they became. They were all telling me the same thing: biology responds to what it receives.
The booby showed me that nutrition can become visible. The crab showed me that compounds from the diet can become part of an animal's physical expression. The tortoise showed me what happens when multiple biological systems are able to maintain themselves over an extraordinarily long period of time. And the ecosystem itself showed me that none of these processes happen in isolation.
Health is a system.
Nature does not separate nutrition from survival. Food is not simply fuel. It provides the raw materials that support growth, repair, energy production, reproduction, adaptation, and the ability to withstand stress. What an animal consumes becomes part of its biology — sometimes in ways we can see immediately, and sometimes in ways that reveal themselves only over decades.
I had gone to the Galapagos with an interest in longevity and nutrition, wondering what these animals might teach me about aging, resilience, and the human body. I left with a broader understanding: perhaps the lesson isn't about finding the perfect nutrient, supplement, or biological pathway. It's about understanding the system. Our biology doesn't exist in isolation any more than theirs does. We are part of systems, too: our families, our communities, our food systems, our environments, and the world we build around us. The state of our biology influences how we think, how we work, how we relate to one another, how we care for ourselves and others, and how much vitality we have available to actually experience our lives.
The animals were not optimizing. They were not counting nutrients or chasing longevity protocols. They co-existed in an ecosystem that, when protected and in balance, provided what they needed to survive and thrive. That does not mean nature is perfect, or that we can replicate an animal's diet and expect the same biology. Humans are different. Our needs are different. But the underlying lesson still holds: what we put into our bodies becomes part of the material from which our bodies are built.
And that brings me back to the question: if these animals receive the raw materials for resilience from the ecosystems around them, what are the equivalent building blocks for us? What do we need to provide our own bodies — consistently, over time — to support the skin, collagen, connective tissue, cellular repair, and metabolic systems that help us maintain ourselves as we age?
That question eventually led me somewhere much more practical: the food we put on our plates.
IV. What Are We Giving Ourselves?
We don't have feet that turn turquoise when we're well nourished. We don't have shells that reveal a century of cellular resilience. Our bodies are quieter about what is happening beneath the surface. But the biology is still there.
Every meal is an input. Every nutrient participates in a larger network of processes involved in energy production, repair, protection, and renewal. Over time, those inputs accumulate. If our bodies are constantly rebuilding themselves, then the quality of the raw materials we provide matters.
Collagen is one of the body's major structural proteins. It gives skin, connective tissue, bones, and other tissues much of their strength and structure. Its production and organization change as we age. Supporting that process isn't about finding one magic ingredient; it is about providing the nutrients and conditions the body needs to build and maintain tissue over time.
Vitamin C is required for collagen synthesis. Zinc and copper play important roles in connective tissue, wound healing, antioxidant defense, and other biological processes. And astaxanthin — the same carotenoid that first caught my attention in the Sally Lightfoot crab — continues to be studied for its potential role in human health.
None of these is a magic bullet — the lesson was never about one nutrient. It's a system.
A nutrient-dense diet provides many of the raw materials our bodies need. Sleep gives us time to repair. Movement gives our tissues and metabolic systems a reason to adapt. Stress management influences the environment in which those systems operate. And the choices we make repeatedly, over years, become the conditions under which our biology has to function.
The Galapagos simply made that concept visible. The animals had access to what they needed because their ecosystem provided it. We have to make more deliberate choices.
And perhaps that is one reason I became so interested in the idea of building meals around nutrient density — not as another restrictive diet or optimization protocol, but as a practical way to give the body a diverse collection of the raw materials it needs.
The nutrition palette I began to create became an expression of this very idea: give the body more of what it can use to reflect health from the inside out.
V. Going Back to the Galapagos*
The Galapagos stayed with me long after I left. It wasn't simply that the animals were extraordinary. It was that they made something fundamental visible. The colors were data. The longevity was data. The ecosystem was data. And together, they were telling the same story: life thrives when the conditions that sustain it are respected.
The booby's blue feet, the crab's red shell, and the tortoise's extraordinary lifespan were not three unrelated curiosities. They were three different expressions of the same underlying principle: a living system is only as resilient as the conditions that sustain it.
Perhaps living a well life is not so different. It is about giving the body what it needs. Protecting the systems that sustain us. Understanding that longevity is not simply about adding years, but about maintaining the capacity to experience those years with vitality. And it is about recognizing that our own health is inseparable from the health of the world around us.
I went to the Galapagos looking at animals. I left thinking about how we live.
The people I met on that trip understood something I had been thinking about in a different way: we cannot assume there will always be a later. Their only regret was that they hadn't done it sooner.
Nutrition belongs in that category, too. Not another thing to postpone until for our new year’s resolutions or when we get older. Not another optimization project waiting for the perfect time. Just the simple, daily act of giving our bodies what they need — and building a life that allows us to be here for it.
We have to learn to pay attention to the quieter signals: our energy, our strength, our resilience, our sleep, our capacity to move through the world, and our ability to show up for the life we have chosen.
The Galapagos reminded me that health is not a single outcome. It is an ongoing relationship between what we receive, what we do with it, and the environment in which we live.
Health isn't something we simply have or don't have. It is something we maintain — one choice, one meal, one day at a time.
And perhaps the goal isn't simply to live longer. It's to make sure that when later arrives, we are still healthy enough, strong enough, and curious enough to be there for it.
